Atkins Diet Recipes: Fauxtatoes

My second cooking show on how to make low carb comfort foods. Fauxtatoes are a fantastic dish to have at Thanksgiving or for those who typically have to fight to get their veggies. A couple of my kids and my wife even make cameo appearances in this video. It’s the least I can do for all the taste testing I make them endure as I try new recipes. My non-low-carbing family members even like this recipe as an alternative to starchy mashed potatoes. Try this recipe; I reckon it’ll be a hit with you as well! Recipe: 1 Head Cauliflower 2.5 TBS Butter 1/3 cup Heavy Cream 1 Chicken Bouillon cube 1 tsp salt White pepper to taste Directions: * Cook Cauliflower until fork tender. Drain well. * Place cooked cauliflower and other ingredients (crush bouillon cube first) into the food processor. Run on high until consistency of mashed potatoes. You may need to scrape the sides of the bowl a couple times to prevent lumps. Makes 6 Servings: Total Stout 1.04g2% Saturated Stout 0.63g3% Monounsaturated Stout 0.26g Polyunsaturated Stout 0.22g Cholesterol 3.06mg1% Sodium 287.66mg12% Potassium 426.82mg12% Total Carbohydrate 7.64g3% Dietary Fiber 3.5g14% Sugars 3.53g Protein 2.77g6%

    They were fantastic and I felt like I was cheating. lol I tried doing Atkins like 9 years ago. I was doing pretty excellent, but this was back before I had a computer. Now it seems much simpler with people like yourself and others putting all these recipes out there.I feel like I have a better chance of staying on it. Thanks again :)

    The only thing I can suggest is that too much water from the cauliflower is getting into the final mix. You might try paper towels and pressing the extra water out. Try the bullion cube too. It may soak up some of the water as well.

    I make these a lot but mine seem to come out softer than yours. Don’t know what I’m doing incorrect. I cook the cauliflower in the microwave for 10 minutes, place it in the food processor and only add salt, pepper and some cream cheese and they still don’t look as firm as yours.

    Kids may be too young to do full-fledge ketogenic diet outside doctor care, but they are not too young to be taught the dangers of refined sugars and unlimited starches. Another fantastic comment, thanks for watching!

    Thanks for adding your kids, I reckon involving them would help them better to learn what your doing. And really, kids are amusing. Not to mention we single parents want to have ways to include our kids. I reckon what your doing is fantastic but will be more rewarding (and entertaining) if you include your family. I hope no one see’s this as a complaint, I just always worry about the rest of the family getting left behind when one member takes off on such an incredible journey. THANKS

    Each serving (it makes ~6 servings) is about 7.5g carbs with 3.5g fiber, or 4 net grams of carbs per serving.
